The dish may be topped with melted grated mozzarella cheese. Typically, the cooked or oven-ready pasta is assembled with the other ingredients and then baked in an oven. The resulting lasagne casserole is cut into single-serving square portions. Perhaps one of Italy’s most popular and well-known dishes is the lasagne. However, it is rare to experience an authentic Italian lasagne with so many variants of the dish available now in restaurants and the freezer section of the supermarket. That’s where Gennaro Contaldo comes in, introducing you to this simple and classic lasagne recipe which originates from the Emilia-Romagna region of Italy. Lasagne is the perfect comfort food dish and is just at home on the Sunday lunch table as it is as the centrepiece of a dinner party with friends. What makes it so versatile is the fact that it can be made well in advance and baked when required – perfect for stress free hosting! An authentic lasagne is made with the famous ragu Bolognese and egg pasta sheets typical of the Emilia-Romagna region, although dried pasta sheets can be used instead thanks to their ready availability. Layers are built up using the pasta sheets, ragu and béchamel (white) sauce, all topped with a final layer of the sauce and a sprinkling of grated parmesan cheese. Method Ingredients 4 x servings For the Bolognese ragu – see recipe here: 🤍 For the white sauce: 40g butter 40g plain flour 500ml milk Salt & black pepper 100g grated parmesan cheese About 8 x dried egg lasagne sheets Method First make the Bolognese ragu - see recipe here (HYPERLINK) Preheat the oven to 200 degrees centigrade. Make the white sauce – melt the butter in a small pan on a medium heat, remove from the heat, stir in the flour with a small hand whisk (this will avoid lumps from forming) until you get a paste, stir in a little milk. Return to the heat, add the remaining milk and stirring all the time, cook on a medium heat for about 3 to 4 minutes until the sauce begins to thicken. Remove from the heat, season with salt & pepper and stir in about a third of the grated parmesan. Line an ovenproof dish with a little of the Bolognese sauce, arrange sheets of lasagne over followed by more sauce, then a layer of white sauce, sprinkle some grated parmesan and continue making layers like this until you have used up all the ingredients ending with a topping of white sauce and grated parmesan cheese. Bake in the hot oven for about 30 - 35 minutes until golden-brown. Remove, leave to rest for a couple of minutes and serve.

Lots Put a lil bit of the sauce and meat mix on bottom of pan then lay 3 noodles and top with some meat sauce then cheese then repeat 4 times then top with Italian seasoning Bake at 400 for about 15-20 minutes or until melt on top melted good then let sit for about 15 minutes, Then enjoy ... Rotini Bake recipe: 2 pounds ground beef, cooked and drained 2 jars pasta sauce 16 oz box rotini pasta 24oz cottage cheese 5 cups mozzarella cheese 2 eggs, beaten 1 tsp garlic powder 1 tablespoon parsley flakes 2 tsp dried oregano Mix pasta sauce with cooked and drained ground beef. Put small amount on bottom of sprayed casserole dish. In a separate bowl combine cottage cheese, mozzarella cheese, eggs, parsley flakes, basil, and garlic powder. Layer rotini, cheese mixture, and sauce. Add remaining sauce and mozzarella cheese to the top. cover and bake at 375° for 25-30 minutes.

Layers: Thin layer of julienne onion Sauce Pasta sheets Bolognese Pasta sheets Little sauce Kale Mornay Pasta sheet Bolognese Pasta sheets Sauce Mornay to top Cover with parchment paper and seal with tin foil over that. This will help it all steam cook and roast inside without burning the top. Cook for 45-60 minutes at 180c/350f remove from oven, take of the wraps and bake an additional 15 mins to tighten the top. Ingredients - 1 brown onion, diced - 1 carrot, diced - 2 sticks celery, diced - 2 tbsp, olive oil - 500g pork mince - 500g beef mince - 200ml red wine - 2 x 400g jar tomato passata - Parmesan 200g - 300g Tipo 00 flour - 3 eggs - 1 tbsp olive oil - Salt to taste - 50g butter - 50g flour - 500ml milk - 1/4 ground fresh nutmeg - 350g mozzarella - Small bunch basil Method 1. Start with the sauce for the meat, heat the olive oil in a large pot and saute the onions, carrot and celery. 2. Add the meat and a good pinch of salt, making sure you break it up and cook for 4-5 minutes. Then, add the red wine and reduce. 3. Once the wine has evaporated, add the tomato passata and stir well, and pop in the rind of the parmesan. 4. Turn to med-low and place the lid on to cook for 1 hour. Then, remove the lid and cook for 1 more hour. 5. For the pasta, with the flour on the bench, make a well in the centre and add the eggs, oil and a pinch of salt. 6. Starting from the centre, work the dough with a fork until it starts to come together. Once it comes together, knead the dough into a smooth ball (around 8-10min). 7. Let the dough rest for 30 minutes before you roll it out. Once rolled, blanch the pasta sheets in boiling salted water for 2 minutes and then place into cold water to stop the cooking. 8. Remove from the water and place onto an oiled tray in the fridge. 9. For the white sauce, melt the butter and add the flour and stir. Cook this for 2-3 minutes and then add the milk. Whisk over medium heat until you have a smooth sauce. 10. Add 40g of grated parmesan and the nutmeg, and stir until the cheese had melted. 11. To make the lasagne, start with an oven save dish and ladle some of the meat sauce, then a drizzle of the white sauce, then a single layer of pasta, before adding more meat sauce, white sauce and some of the mozzarella and parmesan, repeat until all the pasta and sauce is used up. 12. The last layer, spread the basil before you finish it with the meat sauce but leave some of the cheese to melt 1/2 way through the baking. In total you want at least 5 layers of pasta. 13. One hour from start-to-finish (and half of that's in the oven) and you can be serving up a big meaty-cheesy dish of lasagne, with enough for second helpings.
